A modern spin on the classic mojito!
60mls White Rum (any brand)
30mls Passionfruit pulp
4-6 mint leaves
4x wedges of fresh lime
Fill the glass with ice (1/3). Add the white rum and then the passionfruit pulp. To extract flavour from the mint leaves, place leaves in the palm of your hand and squeeze tight. Place mint leaves in the glass. Squeeze the juice from the limes into the glass. Put squeezed lime wedges to the glass. Top up the glass with ice and soda. Stir mixture and garnish with lime and mint.
